The roasting process is what gives the characteristic flavor of coffee by causing the green coffee beans to change in taste. This is where the art takes place and the roaster imprint his/her caracteristics to the coffee.

Geisha

The Panama Geisha coffee is grown in the Chiriquí highlands. Originally from Ethiopia. The one in Panama is descendent from T2722. This variety of Geisha produces an exceptionally high quality coffee when the plants are meticulously taken care of at high altitudes. They are especially distinct for its gentle floriated scent that resembles jasmine and peach.

Pacamara Honey

A hybrid cross between the Pacas and the Maragogipe. This coffee is honey processed.  The process starts with the skin removal from the coffee fruit immediately after picking, but the beans were dried with some of the pulp or “honey” still adhering to them.  As a result, the pulp adds sweetness and a bit of a fruit taste to the bean.

Caturra

Caturra is a natural hybrid of Bourbon, one of the world’s most culturally and genetically important varieties of arabica coffee. But although Bourbon originated in Ethiopia, the first Caturra seeds were found in Brazil. The cup characteristics of the Caturra variety include a clear acidity with lemony flavour notes, especially at higher elevations.

Catuai

The Catuai variety is a small sturdy plant developed in Brazil. Catuai coffee contains robusta coffee elements in the seeds causing the acidity in it to be very low while bitterness feels so strong. Even though it’s bitter, Catuai gives an after-taste fruity and herbal flavor to each brew. The taste of coffee is also inseparable from the production and processing process.

Typica

Typica coffee has a very low production but excellent cup quality. It is very popular among coffee growers thanks to its clean, complex, and generally high-quality cup profile. Typica produces a clean and resonant acidity which increases in intensity at higher elevations. The cup can be characterized by lemon and floral notes and by a sweet aftertaste.
